Avocado Curry

Another simple way to enjoy the avocado for a meal at home.

INGREDIENTS

  • Avocado 500 gm (not too ripped)
  • Shallots 150 gms
  • Green chili 2 nos
  • Ginger 50 gms
  • Galangal 50 gms
  • Lemongrass 50 gms
  • Kafir lime leaves 1 nos
  • Garlic 2 cloves
  • Coconut oil 100 ml
  • 1 tsp turmeric powder
  • 1 tsp roasted cumin powder
  • Coconut milk 300 ml
  • Salt to taste

INSTRUCTIONS

  • Peel and cut shallots in to two.
  • Ginger, green chili, galangal, lemongrass, cut them in to small pieces
  • Heat up the pot, add coconut oil, all the cut vegetables and sauté well.
  • Add turmeric powder, roasted cumin powder and sauté well.
  • Add coconut milk, tear kaffir lime leaves into the pot and add salt. Simmer it for 5 minutes.
  • Mean time cut and peel the avocados into small pieces, add them into the simmering coconut gravy.
  • Cover the pot and simmer for another 5 minutes.
  • Serve hot with rice or any kind of bread.
