Another simple way to enjoy the avocado for a meal at home.
INGREDIENTS
- Avocado 500 gm (not too ripped)
- Shallots 150 gms
- Green chili 2 nos
- Ginger 50 gms
- Galangal 50 gms
- Lemongrass 50 gms
- Kafir lime leaves 1 nos
- Garlic 2 cloves
- Coconut oil 100 ml
- 1 tsp turmeric powder
- 1 tsp roasted cumin powder
- Coconut milk 300 ml
- Salt to taste
INSTRUCTIONS
- Peel and cut shallots in to two.
- Ginger, green chili, galangal, lemongrass, cut them in to small pieces
- Heat up the pot, add coconut oil, all the cut vegetables and sauté well.
- Add turmeric powder, roasted cumin powder and sauté well.
- Add coconut milk, tear kaffir lime leaves into the pot and add salt. Simmer it for 5 minutes.
- Mean time cut and peel the avocados into small pieces, add them into the simmering coconut gravy.
- Cover the pot and simmer for another 5 minutes.
- Serve hot with rice or any kind of bread.
